Roasted Portobello Mushrooms with Basil- Yogurt

Roasted Portobello Mushrooms with Basil- Yogurt
Serves 2 Persons

- 300 g Zucchini
- 300 g Portobello Mushrooms
- 4 Teaspoon Olive oil
- 4 Teaspoon Lemon juice
- salt, pepper
- 150 g Low fat Yogurt
- 12 Basil leaves
- 4 Tablespoon sour cream

Cut the zucchini in ½ cm slices, clean the mushrooms and cut them in slices.
Add a few drops of oil in a pan with zucchini and mushrooms with high heat for 5 minutes. Turn until golden brown. Sprinkle immediately with lemon juice, add salt and pepper for the dip: Mix yogurt and basil to puree and then mix the sour cream.

This dish tastes great cold or hot! Also, this is a very nice option at the office.

Grilled Chicken breast with Mango-Peanut-Relish

Grilled Chicken breast with Mango-Peanut-Relish

(for two Persons)

- 160 g Chicken breast (filet)
- 1 Teaspoon dried thyme
- Salt and Pepper
- 2 spring onions
- 2 Teaspoon Oil
- 400 g Mango
- 200g red bell or sweet pepper
- 8 Teaspoon chopped peanuts
- 8 Teaspoon Limejuice
- 5 drops of Tabasco

Get the chicken clean and dry, chop the onions and mix half of them with salt, pepper, thyme and oil. Rub the chicken filet on both sides with the mixed herbs and put it (wrapped) 15 min in the refrigerator.
Relish: peel and dice the mango, dice the bell pepper in little cubes, mix the mango, bell peppers, other half of the onions (including the green) and peanuts with the lime juice.
Use a touch of salt and Tabasco.
Preheat the grill. Grill the chicken on each side for about 5-7 min. Serve it with relish.

Tip: to diversify the relish, you can use papaya or apricots instead of mango.

Mini Pizza - Serves Four

cooking : 10 min

8 small pita bread pockets.
2 cups bottled thick tomato sauce.
2 cups thin sliced or graded fresh mozzarella.

Preheat the oven to 200 C (400 F)
Put the pitas on a covered baking sheet(s), spread the tomato sauce over it until the edges are
covered with cheese.
Bake it for 5 to 10 min until the cheese is melted and begins to brown.
